May I make a suggestion..cut back on the nuts and seeds,serioulsy,1/4 cup a day is plenty and make sure you soak them if you do indeed eat them.
Methylcobalamin is a better and more absorbable type of b-12. Take alot of it at first,,then go to a maintenace dose.
I was just diagnosed with insulin resistance and I too was an acitve bodybuilder. My feet and my hands are still killing me and I now have kidney pain..
Have them do an oral glucose test on you. A noral test shows you how your insulin is working..it tokk 78 units of my insulin to bring down 100 grams of dextrose. I am an eyelash away from diabetes.
Just have 1 piece of fruit a day..stay away form melons,bananas ,citrus and pineapple.
Eat fruits like apples,nectarines,peaches,plums and of course berries.
other than that your diet is excellent, I'm quite jealous actually lol.
