i've been making sunflower seed cheese for years and i love it.
i don't try to compare it to cheese made with dairy milk.
i have an allergy to dairy and if i eat even a little dairy cheese,
i'm addicted! i want MORE and MORE and MORE. :)
so i just do this: grind the sunflower seeds with a coffee
grinder, mix with water to the consistency of a milkshake,
let sit on the counter for a few days, stirring a few times daily,
stirring in the dark that gathers on top.
after a couple of days, it tastes like cheese.
a few more days and it reminds me of bleu cheese, roquefort.
i like it best when i add dried dill and celtic
Sea Salt .
