First things first: I'm addicted to cheese. I can (and have) eaten strictly vegan for many months at a time but I always fall back to cheese. Not junky plastic-wrapped sliced cheese, but artisan cheeses from around the world.
My question is this: is cheese ever actually heated? As I understand the curdling is done with animal by-product enzymes. Does this mean that cheese is, theoretically, a raw food, just not a vegan friendly one?
