1> Seeds that sprout quickly and large - jars are nice, trays work.
2> seeds that sprout quickly, but small - jars a pain, trays or cloth better.
3> Seeds that get gelatinous and small - jars don't bother, cloth best, usually trays need to be lined with cloth or paper.
Mostly it has to do with the amount of rinsing, and the finickiness of the seed to sprout. Small seeds tend to get rinsed away before they sprout depending on which method.
Things like Chia and Flax get really gummy and rinse thru the tray.
