1. I believe it's best not to store juice any longer than 24 hours, in an airtight container while being kept cool. The longer a juice sits the more it loses it's nutrients. It also starts to taste funny, especially carrot juice. Of course, my grandmother would disagree. She'll juice a pitcher of carrot juice and drink it for the next three days.

During my longest fast I went camping with my family and brought along grape/apple juice in cooler and lived off that for about 3 days. I'm sure it wasn't great for me, but I was determined to continue my fast and determined to go camping. I did drink a lot water while there, too. In fact, I drank mostly water. Once you've fasted for a while, you don't require much juice. Towards the end of my long fasts I'm usually mostly water.

2. I think your levels will be effected for sure. All hormone levels are effected while fasting, usually for the good. What you eat plays a huge role in your hormone levels. Most people experience a balancing of hormones, where mood swings and "fuzzy thinking" go away. I'm one of those people who notice a complete balancing and clear thinking. :)

The estrogen level/weight loss thing is something worth looking more into.
