Two ideas - maybe the oil you are using is spoiled or has some impurity that you're reacting to, or maybe it's the brand and you should try another brand. Some COs are made by a fermenting method and some are made using a centrifugal method. I would see which kind yours is and try the other kind.

You shouldn't have to use digestive enzymes with Virgin coconut oil. Hope you find something that works for you!
