You can make whey from either just letting milk sit at room temperature until it separates or even better, culture your milk with kefir. You can drink whey straight, add it to drinks, and use it for fermenting veggies and soaking grains. It's a wonderful healthful drink.
There are many yahoo and other groups that explore fermenting and eat fermented foods. Many of these groups follow Sally Fallon and weston Price Foundation.
I've been eating fermented foods for over a year now and have never looked back. (and of course, never got sick!)
