Hi Anya,

Sorry I haven't been on curezone for a while. I had a notion to look here today probably because your post was "calling" to me.

I did plow through your post and will tell you how to bring your kefir grains back into pristine condition. It will take much patience and diligence on your part. Are you ready?

You need to give your kefir grains a fresh change of milk every day. That's all you really need to know but I will elaborate. Give them the amount of milk they can use in 24 hours. You will have to figure out that part. Don't get lazy and skip days. They like to eat everyday, just like you do. And they don't like spoiled food. Give them the best you have, the freshest milk. No UHT junk. Regular pasteurized milk from the store is fine if you can't get raw. Especially during recovery time maybe you don't want to use expensive milk. When it starts to have a clean sour smell you can get raw milk if you want or if you can even get some.

Go by taste only. Not consistency. If it gets the least bit sour in 24 hours, you have found what they need and so strain it off and add new fresh milk. Good consistency will come later with practice. For now, let's get them healthy.

Another very important thing. You are letting your kefir sit in the same milk way too long for the amount of milk you have over them. You should have virtually no separation before it is time to strain. That means you have to remove some of the kefir grains from the jar. Try to see if you can recover just one tablespoon, otherwise they will eat you out of house and home. Remember when you get separation they are starting to starve. When you get just a few kefir grains doing a whole quart of milk in 24 hours, you will get the bestest, mildest kefir ever. Delish!

They will start to make very nice kefir within two weeks. They will still look ugly for a while. But just the fact they are making good kefir should encourage you to press on. They will start to grow within four months. That's when they begin to look pretty. Don't press on them or otherwise stress them when you strain.
