This I know: with proper care kefir grains recover from the worse abuses. They adjust their microflora according to their environment. For example, I received some kefir grains just last week and they made kefir that tasted totally different from what I make. That's because they were in a different household with different yeasts in the air, etc. In about 10 days, the kefir tasted just like all my other batches. (I have four different strains of kefir grains.)

Water kefir grains are a whole different animal. I don't know why they put the word kefir in there. Here's what they look like:

Question: How can I convert milk kefir grains to water kefir grains?

Rinse all the curds off of about two tablespoons of milk kefir grains in purified water. Put them in a jar and use the same recipe as you would for the genuine article. Some people say the converted milk kefir grains lose their vitality after a while. I never had that experience. Mine kept going for a year, and they may still be going. I gave them away when I obtained genuine translucent water kefir grains. Read the above link for more details.
