Take 1/3 cup of pumpkin seeds and a clove or two of garlic and chop finely in processor. Add a big handful of cilantro and of basil too if you have it. Chop finely again. Add olive oil til you have the consistency you like. Add parmesan cheese to taste.
and Sea Salt to taste. Use roughly chopped as a sandwich spread, thinner over pasta. It is delicious.
PS, you can add a handful of mint leaves also and it is awesome with an explosion of flavors. Good way to get those pumpkin seeds in your diet. (Cilantro helps to rid the body of mercury too). How's that for majorly multitasking.
