I have heard that stainless steel is good because it doesn't leech anything into the food and cooks evenly.
Surgical stainless steel is the least porous and easy to clean, hence "the best" but it is expensive.
I bought some stainless steel pots at Walmart with glass lids that also strained out liquids between $10 to $30 each.
At department stores, Calphalon sometimes has sales on individual stainless steel pots and saucepans with lids. I got one for $20.
