If you don't have a wheat intolerance, I would highly recommend seitan as part of your diet. It has the consistancy of meat and takes on the flavor of the dish it's cooked in.
I use it a lot in place of ground meat. I chop it up in a food processor until it has the consistancy of ground meat, then I boil it for 15 minutes or so. That softens it up and saps some of the soy out so it's not so salty. Then you can cook it in all kinds of things. I like it in tacos, sloppy joes, chili and shepherd's pie. You can also chop it up like beef slice bites and stir fry it that way. That's really tasty as well. They even have "chicken" flavored seitan that my husband liked.
You can buy White Wave seitan at Whole Foods and Central Market here in Texas ($3.79 for 8oz). There are also easy recipes for seitan online if you have a breadmaker. Just google it!
