Weat-gluten is a very common problem, and many do not know that they are sensitive/or have intolerance to this.

A sore nose is a very good indicator that it is baked white bread that you should avoid / try to stay without for a while. It is not easy to avoid, because you find it absoutely everywhere there is something to eat.

Many people spend a long, long time to take the warnings seriousely, so this is a long process, because it is difficult. Mostly it is unconciouseness that is the problem. Seriousely sick people, could by just to avoid white refined sugar, white cooking-salt and white bread, they would heal much faster and could avoid a lot of pain and complications, just if they would avoid the "white stuff", so there is something there as in the exspression you mentioned.

If you are healthy, it is important to avoid this kind of favorite-snack in everyday life, depending on your knowledge, ability and desires. Keep them for occasional use. If you suffer and fight a disease, it is important to avoid and to replace.

The real healthy way to do it is to replace all the good stuff with new "favorite habits"...... By only adding a more healthy ingredient to replace the unhealthy; Which means you have to do it yourself; That`s how we do it in the Macrobiotic cooking.

Weat flour is replaced with Spelt-flour; or Corn flour, Rice flour, Buckweat, Sweet-rice, Polenta, Kamut or Sweet rice.
I already baked delicious bread with Spelt-flour, sourdough and ricemalt for 20 years. If you once learn how, it is not really difficult to bake something tasty. If you see how food is prepared once, you learn it!

Replace starches like potatoflour or maisenna, with
Kuzu-root or Arrow-root. And your Spelt-flour-pancakes become medical; And then if you make jam with your homemade Marmelade, made with Pektinpowder and kalsium-powder; You will have a prectly delicious meal. Or add Ricemalt and walnuts to your pancake-preparation.

Protein or meat-products is replaced with Beans (Cooked and prepared in the right way; made digestive, delicious and tasty).

Sugar is replaced with Rice-malt, Barley-malt, Apple-juice, Pear-concentrate, fruit, Raisins, Maple Syrup/ Maple Sugar or FOS.

If you learn the basic of macrobiotic food, cookingmethods, understanding of the 5-element theory; Fire, Earth, Metal, Water and Wood and how those play together all the time / how they play together and change, and how they have a strong influence on our lives all the time. The teaching about food and climate, also bring you understanding about how important it is to choose what to eat, when to eat it or how to balance it.

Health is not about to awoid everything you enjoy.... To forbid yourself something, could do more harm.

But health is to know how to balance what you eat, and how to choose the ingredients in your cupboard -

What you eat everyday is important for your well being.
If you learn how to do this accoding to your needs......you could really enjoy your french bread with garlic sometimes....
