Just my 2 cents, or shillings ;) I would follow Sheldon's diet recomendations, and would recomend, at least for now, to completely avoid corn. You can always add it back later and see if you can handle it.
Personally, I think the fruit is the big one to avoid, since Fructose is a major problem that a lot of people are not aware. If you don't find Tomatoes too acidic, they should be OK because they don't contain any fruit
Sugar (fructose). As for spices, proceed with caution, they may work for you but you might want to avoid them temporarilly until you are stabilized. The Coconut milk should be OK as long as there is no sweetener in it. Be sure to read labels, Fructose is added to A LOT of products.
You might want to experiment with substituting white rice for brown. I know brown rice is supposed to be much better for you because of the fiber, but the fiber in vegetables is far less irritating. I think Sheldon might dissagree with me on this, it has been a while since I checked his dietary recomendations, but for me, white rice is easier on my intestines.
Unless you are trying to be a vegetarian, you might find that low fat skinless chicken breast, and fish, will give you an additional source of protein that is non irritating and will help to nourish and heal you. Avoid saturated animal fat, because it increases inflammation. Certain fish oils have also been shown to reduce the inflammation in UC such as DHA.
I am sorry to hear that you spent so much on the Aloe product. I went through Six bottles of it with absolutely no results, and I know of others that have had the same experience. Unfortunately that company is pretty close to being a scam, as they promise a cure, and then when it doesn't work, just say you have not been following it properly.
