Here is what works for me.
First, I maintain the ratio of two parts cottage cheese to one part cold pressed flax seed oil. I use 1/2-cup cheese and 1/4-cup oil. You may want to use more or less, but keep the ratio.
I add a variety of flavors. Since I am a chocohaulic, I use pure cocoa powder, sweetened with stevia, most of the time. Other times I use honey, fruit preserves (that do not contain added sugar), fresh fruit, and sometimes a dip mix.
In all cases, I use a mini blender to thoroughly mix the ingredients. I have found that running it at least one minute does a good job and results in a smooth mixture. It comes out about the consistency of soft ice cream.
This should make things a little easier.
