Veggie salads and dressings


I went to Meijer's late last night to get some raw veggies and salad stuff. But yeah, I'm lazy, I bought the bagged salad. lol (I used to hate making salads as a kid before they came out with this bagged salad. Least I'm trying. lol) But their "veggie" salad is pretty good. It has Romaine and Iceburg lettus, carrots, snow peas, radishes, and Red cabbage in it. Then I had bought raw spinach last night also, so I shredded it up in my salad. If no one would have watched, they probably would have thought it was just lettuce at a glance in the bowl. :D But it gave me ideas on how to add more to my salads so that I can benefit more from them.

Tracey gave me a recipe last night for Vinegarette Salad dressing. I have yet to make it myself but I'll share it with you all.

Vinegarette Salad Dressing
1 tsp dijon mustard
2 tbsp lemon or white wine vinegar
1/4ish cup of olive oil
1 dash of salt (I would use Sea Salt seeing how we are trying to be healthy here. :D )
whisk it all up

That is it. Looks simple huh? If someone tries it, let me know how it tastes. I bought two organic made salad dressings so it will take me a little while before I can try it.
