I do not know of Danskware, but if they say its non-teflon, then I suppose thats a good thing.

But so, what is it then? I do not have much faith in anything that is used to "coat" the pan. If the pan was made by using a process that makes the metal super smooth or something, well, that might be safe.

Any coating likely can come off gradually while cooking, due to heat and so on. Its just that tiny "1/1000th", or a billionth, that makes us ill.

My advise would be to not use anything but plain steel for now, until they offer some evidence of saftey on coated pans and cookware.

Or just eat whole foods without cooking them![ya, I try to, its a difficult way to ge full sometimes, and some foods just really need to be cooked, for sure]
