Hi again Tasman,
You can work on the pancreas and adrenals in several ways. Herbally Dr. Christopher uses this formula: 1 part Golden seal, 6 parts Uva ursi, 2 parts cayenne, 16 parts Cedar berries (Juniperus monosperma), 3 parts licorice root, 3 parts mullein.
There's a good chance you won't be able to find those cedar berries as I think they are particular to the region he was working in (western US). You can always order the product from the herbsfirst website http://www.herbsfirst.com/discriptions/panctea.html
If you can't whip up something like the formula above you can be creative and make a formula with one or more of the following: red raspberry leaves, blueberry leaves, blue cohosh, marshmallow root, poplar bark, dandelion root, burdock root, sumac berries, saw palmetto leaves, malva root as well as whatever you can get ahold of from above recipe.
Another formula you can make that will do wonders for blood Sugar and general balancing is the schulze's super tonic. Here's the recipe at Tom's site http://healingtools.tripod.com/supertonic.html Schulze charges 22 bucks for 2oz and we make gallons at home for less than that - and we eat more than 2oz in 2 days!
I would also add a super food formula, which you can also make at home if you don't want to buy from the many people who sell it.

Do yourself a favor and instead of eating fruits, switch to vegetables and veggies juices. The fruit can be just as detrimental to blood Sugar unless used sparingly, even with an already well functioning pancreas, liver etc.

You said you have removed all refined grains. That is good. Great ways to eat grains are whole, soaked and sprouted, then cooked on low heat. This will do exactly the opposite for you and your blood Sugar as eating grains in the refined manor. It will build the system and encourage stable blood glucose. Eat beans and legumes like this too. That should do wonders for your blood sugar and it should help you will feel satisfied.

I wouldn't worry too much about the weight. It will come off naturally as you get your system in order. That's great that you're coming through the sugar withdrawal!! I know from experience it's a toughy... You already have a great start by cleansing the bowels. Hopefully you'll follow with the liver and kidneys too!
