Yep, taking more oils would change color. You'd think it would make them darker as it releases more bile and thus more pigment, but it also DEcreases transit times so they end up lighter! :)
broccoli is a cruciferous veggie, which is great for a lot of things, but it doesn't quite qualify as a green leafy veggie, which are the powerhouses of veggies. :) Both will help iron and minerals, however. :)
