Pasteurization kills the proteins in the milk. Proteins are quite delicate. Once they are misshapen, the body tends to assume that they are viruses instead of food. But if you simmer milk on low heat for 10 minutes, that can render it easier to drink because it breaks down the sugar. Pasteurization is done very quickly and at very high heat, sigh. Tweet
