The best coconut oils (virgin) have a very delicate coconut aroma. When you cook with it, when it first melts ,you can smell the coconut but its disperses with the flavors of whatever you are cooking. I sometimes mix it 1/2 and 1/2 with organic butter depending upon the flavors I am looking for.
BTW seed oils, FLAX in particular go rancid very quickly. Flax oil starts going rancid the minute it is pressed. It is highly unstable and if you ask me over rated. If you insist on flax oil then grind your own in a little coffe grinder and eat immediately. I used to use a proprietary blend of flax and some other oils but it made my family break out and have bowel problems. After eliminating the other oils the culprit turned out to be the flax oil component.
The sources I have read recommend coconut oil for cooking. I don't deep fat fry anything so I have not had it at temps as hot as a fryolater though.
