Well, first I don't agree with the idea that not getting enough carbs causes energy depletion (or stops your brain from functioning), but that's another matter.
But SCD allows oodles of carbs, so what specifically is your concern? Grains? Why did I guess that? Because grains cause lots of people minor and major GI track problems, IMHO. And we are all very emotionally attached to them and just resist like heck the idea of giving them up. It is one of those unfortunate ironies that the foods we think we just cannot live without are the very ones that are causing us problems.
And it seems the first thing you are thinking about is making "substitutes" with almond flour, etc. (I am probably sounding overly critical here, and I don't mean to be. Just, been there, done that.)
Maybe try getting your carbs from allowed legumes for now. Start out simple. Build up a base of easy stuff and expand from there. The yogurt doesn't take much of your time, once you are set up, it's just planning.
