yummy recipe you can have on the candida diet!
I don't know about the rest of you, but the diet sure gets tiresome.. especially the lack of delicious deserts! Well, here is a recipe I tried today and is it ever GOOD!
It didn't take too long to make, either.
It is fine for the candida diet and low-carb... I figured out that there is approximately 2.4 net carbs per serving. (not counting xylitol since it is a
Sugar alcohol).
Lemon whip
In a saucepan, stir over medium heat: 1 whipped egg, 1 tbsp butter, 2 tbsp lemon juice and 1/3 cup xylitol. Boil for 3-5 minutes, or until it coats a metal spoon.
Remove from heat and cool quickly by placing pan in a bowl of ice water. Continue stirring for 2 minutes. Transfer it to a bowl, cover with plastic wrap and chill for about 30 minutes.
Whip 1 cup of heavy whipping cream with 2 teaspoons of xylitol. Fold half of the whipped cream into the chilled lemon mixture. Divide it into 4 serving cups, top with the remaining whipped cream. Chill until serving.
