Thanks! I found them last night at the grocery store so i bought a bunch. Luckily we have this great Korean store here that has all kinds of vegetables - I think they are all organic too and cheap! (JA's are also called "sunchokes" in case anyone can't find them at the store)

I found this recipe online so I am going to make it tonight - thought I would share it with all of you:

Title: JERUSALEM ARTICHOKE SOUP
Categories: Soups, Vegetables
Yield: 4 servings

2 lb Jerusalem artichokes
6 c Chicken broth
1 c Thinly sliced green onions
Salt/pepper to taste
2 T Minced fresh dill

Scrub Jerusalem artichokes and cook in simmering water 30-40 minutes, until tender. Drain and discard cooking liquid. Peel and mash artichokes and place in a large saucepan. Stir in chicken broth and green onions. Simmer for about 15 minutes; season to taste with salt/pepper and serve sprinkled with dill.



Although I wonder if you have to eat them raw for full benefits?? Anyone know??

I was wondering - how bad was your candida and how long did you have it? 10 days sounds like a very quick recovery - you are very lucky!! I was on Antibiotics for a year and a half so I am probably in pretty bad shape. Although within 2 to 3 weeks of the candida diet I am much much better. I seem to be normal most days but I feel like I am only preventing symptoms sometimes and never really killing it - my joints continue to crack even though the rest of me feels a lot better. I had all kinds of crazy things going on but no skin conditions or yeast infections. I wish I would've figured out sooner what my problem was because it took 4 months of doctors visits and research online til I finally figured it out on my own and started treating it. I would probably be almost fully recovered by now! Anyways, I would love to know how you got candida and how long you were sick because I miss eating fruit! I can live without bread - just wish I could eat a banana but they are very high in Sugar and I am afraid to try. I also miss the occasional glass of wine that I used to drink with dinner!! Can you drink alcohol yet symptom free? I just started eating strawberries yesterday and they didn't cause any reaction. I usually get pressure in my head and stabbing/burning pains in weird places within an hour if I react badly to what I ate. That's when I know I can't have it. Well I would love to hear back and see how you are progressing. Thanks.
