I agree with you that if your on the anti candida diet and are vegan you will have very little choices to get nutrition; make sure you dont develop any deficiencies first and foremost; supplements can temporarily take care of this while youre knee deep in the diet. Im not sure if we can get away with this but perhaps when we need something sweet or starchy we could get like a piece of fruit or sprouted bread and have it with a bit of antifungal ingredient as to "negate" the feeding of candida by killing them. One thing that I look forward to eat everyday is my spelt bread (or sprouted wheat) with loads of garlic and olive oil (not sure if this ok or not).
