I have an idea for you for the pie filling. It is one I used to use a very long time ago.

Make your own yogurt, then you turn it into yogurt "cheese," by straining it over cheesecloth until it nearly reaches the consistancy of cream cheese. If I remember right, I put it in the fridge overnight, straining. The volume would reduce by about half.

You can then doctor it up anyway you want. Off the top of my head, nowadays maybe I would mix in some xylitol, and maybe put berries over it. Hmmm...

Addendum: perhaps mixing in some coconut for more anti-candida punch? This yogurt cheese can also use something to "cut" the texture. Those who can tolerate this much diary anyway could fold in whipped cream... careful what you sweeten with...
