First, when you roll the lemon on your counter, I highly recommend using the bottom of a pan to push down on it. I'm a chef... it hurts your hand, especially when the lemon is firm... so I learned to used a pan and both hands to keep it stable when rolling.

Second, keep your lemons at room temperature, they will be softer and easier to juice.

Third, after rolling, cut in half, then wrap the lemon in cheese cloth if you want to keep the seeds out of your lemonade. Just place the cut side down in the middle of a square, twist the loose ends of the square together, and squeeze with your hands. The cheesecloth also give you a better grip on those slippery little suckers! LOL!

Fourth, the second half of your lemon will be ready to go by just having it wrapped up with the same piece of cheesecloth you just used for the first half.
