the trouble with that assertion is it could be made about anything. most people who say they are not religious define the word more narrowly. they don't believe in the concept of a supernatural world that can't be expressed in natural terms. but they do believe in getting up in the morning, eating regular meals, taking showers/baths, lots of stuff. they even usually have faith in mankind and progress.
evolution may seem incredible but like many strange seeming scientific rules is makes sense. "an object in motion will remain in motion indefinately unless acted upon by some opposing force" -- you can't prove that, and it was believed not to be true for thousands of years, but it makes a lot of sense.
