I once made a raw beef dish, and it was excellent. I started with a "naturally raised" steak (which, in this particular case meant the animal was raised on pasture with supplemental grain) and marinated it for two days in kefir (made with traditional kefir grains, not an inferior commercial kefir culture). I then rinsed off the kefir and minced the steak. I didn't like the taste of the plain beef right after I minced it, but after mixing it with diced onion, celery, red bell pepper, and lemon juice and letting it marinate for several hours, it was transformed into something really yummy.
