I know it has been a long time since you posted your question, but I'd like to know what you've done in the meantime and if it's helped. I am very sensitive to almost all drugstore brand and even salon shampoos because of the detergents they use (usually sodium lauryl sulfate, sodium laureth sulfate, ammonium lauryl/laureth sulfate or some combination of these.)
Perhaps you'd like to try some soap-based shampoos. Because soap is basic, and hair is healthiest in slightly acidic environments (around 5.5 pH--7.0 is neutral), these shampoos WILL make your hair a teeny bit coarser (unless you use a good acidifying conditioner) but the unbearable itching and sometimes pain I experienced with my daily showers using the old shampoos vanished. I will never ever go back to those.
You can usually find some liquid soap-based shampoos in health food stores with sizeable cosmetic sections. One popular and good company for some soap-based shampoos is Aubrey Organics. Look around their website:

I haven't tried their products since they introduced orange pith juice (in their Aloe Essence line and GPB Balancing Shampoo) in their formulations! I'm excited because the juice may make the shampoos a little more acidic and will hopefully get rid of the slightly coarse hair feeling.
