Under normal eating conditions one would be ingesting fats and other food stuffs. Fats is one of the main components that the body uses for energy so it's not just a caloric issue that makes the body go into reserve mode thus slowing the metabolism down.
I also imagine that since one is not taking in solids and fiber that that could also play part in tricking the body into going into reserve mode. The body produces hydrochloric acid to digest fiber. That acid production is the body's "normal" state and without it's production you are litterally changing the body chemical make up. That chemical change in my mind can certainly triger a reserve reaction from your system.
