fasting (again) for weight loss, but I don't want to gain the weight back after

Hey all,
I've done two 2-week-long water-only fasts previously, and the weight came largely back (only lost a small amount of weight).

And the funny thing is, my lifestyle is not that bad. I'm nearly totally SOS-free plant-based vegan. No junk food for me, just the occasional white rice because I live in China, and it's kind of unavoidable.

I'm at 220 lb (100kg) and I want to get back eventually to 175 lbs or so. I'm 39 years only, 180cm (5'11").

I have the discipline to keep on fasting for an extended period of time. But this time when I re-feed I'll try to keep to plant juices for a while first, maybe that will ease things back without losing weight.

Also I know once I start eating normally again I have to be careful of processed carbs like white rice, and I have to watch oil sneaking into the food. Also I think before I was eating too much fruit. Probably best to do the fast, reset, and then keep to beans and greens.

So now I'm asking the group for advice on post-fasting meal protocols. Prev. I'd tried Starch Solution, and even a couple of Mary's Mini diets where I ate nothing but sweet potato for 3 weeks at a time. The weight actually didn't come off during those, which is contrary to the results of many other people. Dr. Fuhrman recommends making salad the center of the meal, and maybe that's a better way. Not sure.
