It is a good fast, and definitely gives benefits, I would personally go forwards with it because it /does/ help parasite elimination.
The blood Sugar spike is to be expected on any sort of food (even fats and proteins digest to glucose as an end product), but it is /continual/ high blood sugars that deliver the damage, not short spikes.
If you are several days into the fast and the spikes do not level out, then you need revision of your plan. The 45 min drop back to normal is very good.
The molasses is very much rich in minerals, which is a good subject for the type 2 diabetic.

If you are not using supplemental chromium before your everyday meals, please start, it puts insulin resistance right down and does it for a whole 4 hours. I've found it invaluable for my own good, type 1 diabetic here. I go after the chromium when my insulin doesn't quite complete the job.
