Congrats, that is a good achievement.

As per Dr. Shelton, if one were to fast to completion, they may or may not have the coated tongue before return of true hunger. He suggests that if the tongue becomes pink but the true hunger is not there then continue the fast, but if the true hunger returns and tongue is still coated break the fast. So there are both types of cases.

I have done so many fasts, and I have experience the same, sometimes the tongue is coated and sometimes not. In past few years my tongue stays pink while fasting.

Yes, tongue scraping will get rid of the coating.

It takes a strong WILL after a fast to stay away from junk because it is everywhere and very enticing.
