Sorry to hear that you had your GB removed.

How do you know it is increase in bile and not stomach acid?
Do you have bitter taste in your mouth? If so, then it is bile. If sour then it is acid.

For bile to back up in your stomach the pyloric sphincter has to to open up and bile backs up in your stomach. With GB removed this can occur.

Why now in the middle of a fast?

It could be leftover foods in your intestines or drinking too much water and/or cold water.

Best way to get rid of reflux is drink warm water. In your case drink hot water sipping like tea as per thirst. Rest plenty and do castor oil packs on your liver area. Longer fasts will help the proper workings of the sphincters.

Going forward you may want to look at food combining and eat at regular intervals 3 to 4 times a day. You liver keeps bile flow going in to your intestines because there is no storage sack.

A good thing that you do not eat meat and dairy. As you already know sodas and chips are not at all a good thing for anyone. You just have to find a way to fight those desires to eat junk foods. I give all junk foods a name (in my case, I call it plastic) and say not for me, not in my body and walk away.
