Well, to be honest, the dairy, like milk and cheese and such, was more of a health concern than anything. Just what I have read about through
The Master Cleanse book and the mucoid plaque and all.
As far as egg whites go ... I can't really point to any major health concerns, except for the fact that many hens are pumped full of synthetic hormones in order to get them to produce a larger amount of eggs in a short amount of time.
The way they go about getting an abundance of eggs is quite inhumane and frankly not something I wish to be involved with.
That could POSSIBLY be avoided by going organic. But, to me, this presents a lot of confusion. Do you only eat eggs at home, when you know the source of those eggs? Then again, just because the carton says organic on it, doesn't necessarily mean that they are what we think of as organic. I just didn't want to take any chances so I cut them all out.
Anyway, I have found many recipes online where egg whites are substituted with things like tofu and so far I haven't run into any problems.
