Did not know this about Gouda. My brother, who lives in Holland, brings me always boeren kaas (farmer's cheese)
because that is made from raw milk I read. I will asked him also to bring aged Gouda. I don't like young cheeses I find
them tasteless. I prefer imported cheese, I might be able
to find aged Gouda here.
