It's more likely the other way around, the low stomach acid level led to candida.
I suspect that it will not matter how many you take because it will not improve your digestion for more than a few minutes. Certainly not long enough to make a significant difference to your ability to digest protein.
I took 12 when I did it to get to a slight burning. An expensive business which was a total waste of money but it did teach me something.
Capsules work better because tablets take too long to break up. That could be why you don't notice any burning.
