Your analysis is flawed. Income levels, health care quality/access, water access, and sanitation will all produce the same results. If you look at the countries who eat the least fat, they are all poor countries who most are unable to get enough calories.

Judging by mortality rates is not that best way to judge because richer countries will have better health care and access to treat disease. Example, the average life expectancy for the top 10 industrialized countries that eat between 38-42% fat is about 80 yrs. Cuba is a relatively poor country that eats about 17% fat, but they have a highly touted health care system and their average life expectancy is about 78 yrs, only about two years difference from all those rich countries.

Look at Breast Cancer incidence for a better example. It's way more prevalent in high-fat countries.
