Weight gain is going to be based on calories consumed (generally speaking) and it takes ~3500 caolories above and beyond maintenance to accumulate an extra pound of weight on the scale.

Another way to look at it is if you eat 500 cals more a day than you use you will gain ~1 lb a week.

I cant imagine a tblsp of coconut oil has much in the way of calories.
