The headaches will be due to the side effects of fasting. I got headaches when I did a 2 day juice only cleanse a few years ago. The headaches should pass and seeing as you're on Day 2, the headaches should subside.
You could try juicing apples, pears or berries as these are low in Sugar fruits. Berries in particular are great antioxidants and will give you fiber too. I would stay away from the tropical fruits like pineapple, mango and banana as you said if you have candida. Try making a smoothies out of the low Sugar fruits instead as I mentioned.
