Just from personal experience, my milk kefir seems to work best if I add a bit of heavy cream. I've been experimeting with animal fats & have found them to be hugely beneficial in assisting my probiotics. Even coconut oil didn't work as well (for me). This can pose a quandry (sp?) for those who don't want to eat animal products, but I'm just sharing what seems to help me personally.
