Hi VS,

You can test the pH of the wine with pH test strips. The cheapest source I've found for them is Swanson's Health Products.

A better less "intrusive" method of raising the pH would be adding a few milligrams of sodium hydroxide. I've purchased it from Essential Depot before [satisfactorily]. However, I know of NO pH additive that is 100% flavor neutral.
