I also think the difference between acute and chronic intolerance does much. The typical is acute, one reacts with visible symptoms. Chronic intolerance developes when not listening to symptoms but continues to eat the harmful food. The symptoms then tends to become general, - fatigue and overall discomfort with reduced concentration, and a great need for escapism. The typical foundation for drug addiction.
When stopping to eat the harmful food, the intolerance goes back to acute from chronic, and the symptoms can become truly violent.

I too have lyme d. and have stopped eating all carbs 3 years ago. I also have great problems with mercury and el-sensitivity. I have never ever tested positive on any of the intolerance tests of my MD. I consider this due to the chronicness of my intolerances. But my bioresonance terapeut found it. I could have received treatment for it, but i don't want to ever eat bread again, so we are prioritizing treating other things like Borrealia. And it works quite well, I am free for the aches, the pain and the worst of the tiredness, but not rid of the bacteria.
