There seems to be a perception here that fat in the diet = fat in the blood. Uh...it's not that simple folks. My wife and I increased fat in our diets by about three-fold (good fat's, not hydrolyzed vegetable oil junk), cut out grains, and reduced fruit and other high-carb foods. We eat a modest amount of protein. The level of triglycerides in our blood dropped by about 60%. Our good cholesterol doubled, bad dropped by half, and energy went up significantly. Excess Sugar is inflammatory and the body has to deal with it one way or another. Excess is converted to fat for storage, and has to travel from the liver to the storage sites--via the blood stream! Really.
