Kitcheri is really good but you probably shouldn't eat it every day, the doctor I spoke to said it can cause problems if you it eat just that for long periods of time but it is definitely good to have a couple of times a week or you can do short kitcheri fasts, 2 or 3 days of just eating this. White basmati rice is very good for balancing vata but can increase kapha. I have a feeling that you are going in the right direction with what you are doing, it takes time. If you want to make more progress you need to meet with an ayurvedic practitioner who can tell you what herbs will help you to balance your energy faster. Depression is most often linked to vata imbalance but also can be associated with kapha. Vata-kapha types can tend to get lethargic and depressed.
