That is really interesting. I was reading earlier about how fungi compete with one another and even produce chemicals that inhibit the growth of their competitors. The fungus in blue cheese is from the genus penicillium, which is the fungus that produces penicillin. This fungus naturally produces this chemical to inhibit bacterial growth in its environment but they use other chemicals to block other fungi. They also can compete for resources and inhibit one another's growth that way. I'm guessing that must be what it's doing with the candida.
