Hello Jason, Simple answer: Yes.

Complex answer (simple also) depends on your substrate and what cultures you use/have.

Temperature, ingredients, airborne cultures all influence outcomes. But for me I would do it without hesitation. Your failures will be due as much to ingredient issues as anything ie No chlorinated water: kills the critters you need.

While you sort the issues make the first few with good oxidation control ie lemon juice, natural whey, live yoghurt culture, sauerkraut juice would all help control and develop the culture. FUN: Very smooth thinks I.
