As far as I know,
Extra-Virgin Olive-Oil and
Virgin Olive-Oil are both cold pressed (or cold extracted, as it can also be centrifuged rather than pressed). On bottles of
Extra-Virgin Oil one will typically see "First Cold Pressed" on the label, meaning it was the oil recovered from the first pressing.
Extra Virgin and Virgin related specifically to the acid content of the oil.
Extra-Virgin is meant to be under 0.8%, and Virgin is under 2%. If your olive oil has a "bite" to it, it may be the acid content.
Organic olive oil simply means it was grown using organic agriculture practices. Because organic olive oil is already aiming at a high-class market, it will nearly always be
Extra-Virgin also.
There are huge issues with olive oils being falsely labelled, so when you see "extra virgin" on the label, it may mean nothing at all. In my opinion, certified organic extra virgin olive oil is more likely to be truly extra virgin than non-organic oil. I say that because such oil is already going through certification processes, which may indicate the people making it are genuinely interested in producing a higher grade product, made with integrity. Of course that is just my opinion.
