i just can't understand "why" they want the maple syrup to be almost clear sugar?
3 years ago at the state fair i noticed a maple sryup/candy display and checked it out, the syrup was rated abc with number a being the most clear and c being very dark. when all was said and done, a almost black syrup took first place for taste!!!
i have gotten pure syrup from the amish that was almost black, but they believdd it was because of the black ants that find the syrup while in the buckets!!!!! they don't realize it goes by the way the minerials may or may not come up with the sap depending upon the winter.
we humans have adapted for many generations and will adapt if we are to survive.
